I don't know about you, but when I see Smelts in the grocery stores, I know that Spring is close. Smelt's are usually lightly battered, fried & eaten whole. They are very inexpensive and easy to make.
Ingredients:
12-15 Medium Size Smelts
1 Cup Flour
1/2 Cup Corn starch
1 teaspoon baking powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon seasoning salt
Peanut Oil, or any oil
Directions:
1. In a Large Mixing Bowl add all of the Ingredients for the exception of the fish.
2. Heat enough oil over medium high heat to cover the entire bottom of the pan.
3. Wash the smelts in water.
4. Add the fish to the Flour Mix, Toss them until well coated
5. Add the fish directly into the hot pan, work in batches if you have a lot.
6. Once golden on both sides remove from hot pan and place on a cooling rack or paper towel to dry off the hot oil.
