Chicken Quesadilla's are an amazing blend of whatever you'd Like to stuff inside of them. I like to make mine by using leftovers, or when my vegetables are on the break of going bad. Instead of throwing them out, make something beautiful!.
Ingredients:
Green Pepper
Red Onion
Fire Roaster Red Pepper - From a Jar (Unico is Tasty)
2 Pita Breads
1 Chicken Breast
Mozzarella Cheese (1 1/2 Cups Shredded)
2 Tbls Olive Oil
Salt & Pepper
Roasted Garlic & Chili Aioli (Costco) or you could use ranch dressing or sour cream, & add some hot sauce if you like some heat

Directions:
1. Cube the Chicken in Desired Size and cook over medium heat with 2 Tbls Olive Oil, Season with Salt & Pepper.
2. Cut the Green Pepper and Red Onion and add to the chicken. Still over medium heat cook until the Green Pepper and Onion get soft.
3. Cut the Roasted Red Pepper and add it to the Pan. Brown everything up nice, this will give you better flavor for the Quesadilla.
4. Once Cooked, Build your Quesadilla in Layers. (Pre-heat oven to 375f)
a- Spray the bottom of an oven safe pan or baking sheet with Pam
b - Place a Pita in the Pan to Start
c - Coat the Pita top with Roasted Garlic and Chili Aioli
d - Top with cheese
e - Spoon Out Quesadilla Mix Evenly
f - Top with Cheese
g - Coat the second Pita with Roasted Garlic and Chili Aioli and place on top
h - Spray the Top of the Pita with Pam
i - Place Quesadilla in the oven for 5-7 Minutes, Flip and Place Back in the Oven for another 2-4 Minutes
